I love making whole chicken in the crockpot. I love the taste and you can use the leftover chicken for lots of things – sandwiches, casseroles, soup, and more. That’s great for preparing for protein day. Just don’t eat the onion on protein day, or at least not much of it. You can also serve this with some great veggies for meal day. Try broccoli, red potatoes, carrots or your favorite veggie.
The seasoning mix will probably be more than you need for your chicken so you can separate out what you need and save the rest for another chicken. If your seasoning gets contaminated by the raw chicken, you will have to toss it out. Also, the liquid and bones can be used to make chicken stock for soup and other recipes.
Fall Off the Bone Crockpot Chicken Recipe
1 whole chicken
2 tsp salt
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp thyme
1/4 tsp garlic powder
Cut up the onion and put it in the bottom of the crockpot. Mix salt, paprika, onion powder, thyme and garlic powder and rub all over chicken, even under the skin. Place chicken in crockpot breast side down. Cook on low for about 6 hours.
